Melt in the middle chocolate chip cookies

When our local Ben’s Cookies closed it’s doors for good my children were sad, I offered to make them cookies but they insisted my chocolate chip cookies just weren’t the same! So began the search for a recipe.
It’s taken a while, but I think this recipe hits the spot with a soft centre and not too sweet crunch, even my lot were satisfied!
Ingredients:
200g plain flour
200g self-raising flour
½ tsp salt
170g unsalted butter
200g dark brown soft sugar
100g caster sugar
1 tsp vanilla extract
1 egg & 1 yolk
100g chocolate chips
Coloured sprinkles (optional)
Method:
Pre heat your oven to 180c / 160c fan
Grease & line 2 baking sheets.
Mix the flours with the salt in a large bowl and leave to one side.
Melt the butter then add the sugars and vanilla and stir until all dissolved and combined.
Add the egg & the yolk to the butter mix and beat together.
Pour the butter sugar mixture into the flours and stir well into a soft dough.
Add the chocolate chips and the sprinkles if using and knead with your hands.
Split the dough into 10 or 12 pieces depending on how big you want your cookies.
Roll into balls and place on the trays making sure they have enough room to spread.
Bake for 10-12 minutes until slightly golden – don’t over cook them otherwise they won’t be soft in the middle still.
Leave to cool for a few minutes on the trays then transfer to cooling racks.
