The Best Millionaires Shortbread Recipe
A perfect mix of all butter shortbread, creamy caramel and chocolate topping create this all time family favourite treat
in my opinion you can’t go wrong with a millionaires shortbread, it combines all my favourite things in one delicious slice and its so quick and easy to make too.
Ingredients:
For the shortbread
250g plain flour
75g caster sugar
175g butter (at room temp)
Pinch of salt
For the caramel
100g butter
100g dark brown sugar
800g condensed milk
For the topping
200g milk or plain chocolate chips
Method
Heat your oven to 180c/160c fan and line an 8” square tin
Make your shortbread by mixing the flour, sugar and salt together.
Add the butter and rub through your fingers until it looks like fine breadcrumbs then knead it into a smooth dough
Press the dough into your lined tin then prick all over with a fork.
Bake for 20 mins until lightly golden
Cool in the tin
To make your caramel melt the sugar & butter together in a non stick pan, add the condensed milk and boil rapidly, stirring continuously reduce heat and simmer for 10 mins until thickened. Be aware that this is very hot and extra care should be taken
Leave to cool slightly then pour over your shortbread.
Place in the fridge for 10/15 mins
To make your topping melt the chocolate in the microwave or over a bain marie (a bowl over a pan over boiling water) then spread over the caramel.
Leave to fully set then cut into squares and enjoy
